Dinner consists of two homemade pizzas. The first is a 2 cheese arugula and smoked salmon pizza topped with lemon. The last is a 6 cheese pizza with bacon and sautéed mushrooms.
Orange chicken with asparagus over rice - NOM.
2 Tbsp sesame oil (or olive oil)
2 lb chicken breast, cut into bite size pieces
2 minced garlic cloves
½ tsp red pepper flakes
4 cups chopped asparagus
2 tsp soy sauce
2 tsp honey
2 tsp sesame seeds
juice + zest of 2 oranges
Heat oil in a large skillet over medium heat. Saute chicken, minced garlic, and red pepper flakes for 7 minutes. Add asparagus and cook 3 minutes more. In a small bowl, whisk together soy sauce, honey, sesame seeds and orange juice. Add to skillet and cook 1 minute. Serve over ½ cup cooked brown rice.
